Gluten Free Pancakes with Bob's Red Mill Gluten Free Baking Flour

I've loved pancakes all my life. Who doesn't? We had pancakes often, even for dinner. When the weekly paycheck began to run dry Ma got down the box of Bisquick and not one person whined about it. Sometimes my sister would make a pancake man for me, with a smiling face and eyes. In fact, when I was a child pancakes were the first thing I taught myself to cook.  I'm gluten free by necessity now and have had so many pancake failures. I've tried vegan scratch GF recipes using coconut flour, almond flour or oats ground in the Vitamix, and they were okay, but usually gritty, unfluffy and "tough." Subbing gluten free flour blends for regular flour in a standard recipe never provides the correct ratio of ingredients for a good outcome, and I haven't cared for other GF pre-mixed pancake brands. My last failure attempting to bake a pumpkin bread subbing GF flour taught me that when searching for a recipe, you must find a dedicated gluten free recipe. I'm not a ...

Root Chakra Grid (catching up series) - 03/05/2019

Reiki Grid - coping with low back pain I began collecting hearts just a few weeks before assembling this mini grid.  This red jasper with hematite is the first of my hearts for the chakras.  Red jasper is a grounding root chakra stone, and the inclusion of hematite enhances its healing properties.  I read that hematite is known for healing pain because it encourages balance in nerve impulses and healthy blood flow.  It is also good for muscle cramps and spine pain.  Aside from all that, it is beautiful to look at and it feels nice in the hand.  It has a deep and soothing energy. At the time my back was acting up with a nice case of muscle spasms low on the spine.  Once again I had to plod through the usual course of muscle relaxers and list of exercises to do twice daily and I wanted to get it over with, so I incorporated root chakra meditation and this grid to assist with Reiki.   In addition to the red jasper with hematite heart are those f...

Bird Songs and Bird Calls Log

Prairie Warbler Sunday, 05/03/2020 at Avery Farm Nature Preserve Blue Trail.  Identified by describing the song on the Connecticut Birds Facebook group.  I heard them in the clearing with tall trees on either side, in between the swamp and the woods, after the farm.  Eight to ten notes going up the scale, it had an electronic sound. https://www.youtube.com/watch?v=m5GrQYr36Fk https://www.allaboutbirds.org/guide/Prairie_Warbler/sounds Fish Crow Sunday, 05/10/2020 at Barn Island - at the boat launch Alex pointed the fish crow out to me and described the differences between the common American crow and fish crow.  Fish crow has a narrower, pointier beak, is a little smaller and it is usually found near water. In sun you may catch a purple sheen on the feathers; American crow's feathers are pitch black. They have a higher, nasal call, also known for double Ca!
